If lungs are not removed thoroughly, the residual tissue can affect the taste, appearance, and shelf life of the final product. In many operations, this task is still done manually—workers use hooked tools or suction wands to pull lungs from carcasses. The problem is that manual removal is inconsistent. Some lungs come out clean, others leave behind fragments that go unnoticed until the product reaches the consumer. The core of the machine is its industrial-grade vacuum system.
